Think you know how to decorate a cake? There’s a lot more to it than you might imagine, and if you’re planning to enter the Cake Decorating competition at the Sydney Royal Easter Show, you’ll need precision as well as artistic imagination. Serious competitors will start work a couple of months in advance, and planning happens long before that. Take a close look at some of the winners. Judges award marks for presentation, visual effect, the covering, originality and degree of difficulty. Defects such as air bubbles in the covering, colour inconsistency and crazing all cost marks. And don’t even try to imagine how they might taste. Many of these cakes are sculpted on a hard base, which provides better support for the artistic endeavours of the icing queens.
